Quick & Easy Vegan Family Lunch

I enjoy trying out new recipes on a regular basis, as eating the ‘same-old-same-old’ becomes ever so boring. Often this is inspired by what is left in the fridge or freezer, in which case I either quickly google a recipe in terms of the main ingredient or I just make something up.

The following recipe is an outcome of my latest ‘trial-and-see approach’, which turned out to be very delicious. My three kids have also enjoyed it, which in our household means a lot; as they can be quiet fussy at times!

So I hope you will enjoy it too!


Spinach, Veg & Meat Ball Medley

500g Whole Leaf Spinach

5 Tomatoes (washed, and diced)

1 Leak (washed and cut into rings)

½ Red Onion (washed and cut into rings)

400g Vegan Meat Balls (Soya based)

Extra Virgin Olive Oil

Dark Soy Sauce

Black Pepper


Step 1

Sprinkle the olive oil in a large pan and when it is hot add the onions and leak to it. Fry for ca. 2-3 minutes until they become soft and a little brown.

Step 2

Add the tomatoes and spinach to the onion mix and let it simmer for about 10 minutes. Then add the soya sauce and pepper to your taste.

Step 3

Heat up the Vegan Meat Balls by adding them to the vegetable mix for ca. 5-8 minutes.

Step 4

Serve with Basmati Rice or Brown Rice

P.S.: To make this recipe even quicker, you can use frozen spinach and vegan meat balls.
